Hashbrown Casserole

This recipe via my Aunt Janice. It is always a hit at Thanksgiving and pot luck dinners.

Software:

  • 2 pound bag of shredded frozen hashbrown taters. Thaw.
  • 1 cup of diced onion
  • 1 can of cream of chicken soup
  • 16 oz. sour cream
  • 1 stick of butter, melted
  • 8 oz. of grated cheddar cheese
  • Salt and pepper
  • Crushed cornflakes

Step by step:

  1. Mix first six ingredients
  2. Add salt and pepper to taste.
  3. If the mixture is not creamy add more sour cream
  4. Spread mixture into a 9×13 pan that has been sprayed with Pam or other cooking spray and then add crushed cornflakes over the top. (I have also used potato chips)
  5. Bake for an hour in a 375 degree oven (F)
  6. Enjoy!

Has anyone seen a cool Old West type theme for WordPress?

This school year our theme is old west. For my class, I will be focusing on outlaws, cause that would be really cool.

As a result I would like to make the class website reflect that. Maybe make it look like a wanted poster.

If you have seen anything like that, let me know.

UPDATE: I didn’t find anything, so I have started creating my own. You can watch the progress here, but right now I am taking a rest from it and perhaps making a podcast.

Book Club: The Meme

Eons ago, {Page 132}, Expact Teacher, tagged me to do this book Meme. I actually had forgotten about it but not to worry, here it is:

1) How many books have I owned?

I have no earthly idea. I have my own personal books, my children’s books that are at school… Really I have no idea. Let’s just say quite a few.

What is Reformed Theology2) What was the last book you bought?

The very last book that I bought was What Is Reformed Theology?: Understanding The Basics by R. C. Sproul.

In What is Reformed Theology (formerly titled Grace Unknown), R.C. explores the depth and richness of God’s grace in saving sinners. Through it you can enrich your understanding of key biblical teaching about the nature of God, man, and salvation as it was recovered and defended by the Reformers.

“We believers must ask ourselves why we have come to faith while many of our friends have not. Did we exercise faith in Christ because we are more intelligent than they are?” asks R.C. Sproul in this book. “Did we respond to the gospel positively because we are better or more virtuous?

“We all know the answers to these questions,” continues R.C. “I cannot adequately explain why I came to faith in Christ and some of my friends did not. I can only look to the glory of God’s grace toward me, a grace I did not deserve then and do not deserve now.”

This book can help believers become more firmly anchored to the important theological truths that remind us we are saved by grace alone through faith alone and not by our works.

Harry Potter and the Half-Blood Prince3) Last book that you’ve read.

A couple of days ago, I finished up Harry Potter and the Half-Blood Prince, which I enjoyed very much.

Some things I liked without spoilers:

  • Harry’s attitude from Order of the Phoenix is gone and replaced with a much more confident Harry.
  • We get to visit more with Albus.
  • Not much contact with stupid house elves.
  • Harry’s character arch is becoming much clearer now. It will be worth it in the end.
  • I love how Rowling can construct a story about Voldermort but never have the present living breathing Voldermort show up. She has done that in Chamber of Secrets, and to a much lesser extent Prisoner of Azkaban

Chambers of Secrets is still my favorite Harry Potter novel but Half-Blood Prince probably comes a close second. I may have to go back and reread Goblet of Fire to make that a definite opinion but I am pretty sure. My grade: A

4) 5 books that have meant a lot to you.

I am taking the Bible out of the running on this and changing it to 5 books that I really, really like in no particular order.

  3. Hitchhikker’s Guide to the Galaxy
  4. The Book of Three (from the Prydain Chronicles) (Hmmm, Amazon spells it Pyrdain)

Broken Heart

At least once every single school year I closely consider the lives of the students in my class. Their lives at home; what goes on beyond the classroom. Normally for about 50% of my students, the outlook is good. They come from wonderful homes with supporting parents who want the best for them and will support their kids within reason. The parents don’t go too far with their support but they are there when it is needed. Then there is the other 50% of the class. They come from a variety of homes. Some are just dirt poor and the family barely makes it from month to month. Some have overly protective parents or parents that are completely absent from the home. Other families have other problems that overshadow everything whether it is an addiction (drugs, sex, gambling, the list goes on) or just plain old laziness.

As I consider the less fortunate half of my class, I get this overwhelming sense of sadness and even a burden. Just considering the things that these kids are weighed down with and the extra garbage they have to carry around that kids really shouldn’t have to deal with, it just breaks my heart. The whole experience is quite a downer but hopefully it reminds me to take special care while they are under my care.

While we were at Centri-Kid a couple weeks ago during one of the adult bible studies, the staff gave us a large amount of time to just use in prayer. Our church leader shared with us what her concerns were for the kids that were with us for the week. The issues were enormous: one could very possibly be homeless by the time she got back, another’s parents who weren’t in the church would not allow their child to be baptized but enjoyed what they viewed as free baby-sitting that the church provided. Again, I found my heart breaking for the kids even questioning why such things had to happen. Then we took time for each of us to pray. As I began praying God reminded me of something that it easy for me to forget. He reminded me of that feeling of that weighted burden, how that makes me feel. Then he reminded me how much more his heart breaks for his children who are weighted down by heavy burdens. It was a sobering moment.

Sunday Brunch XLVIII: Fast Food

Time to play catch-up.

1) What is your favorite fast food restaurant?
As I think about it, nothing jumps into my head as being my favorite. I do enjoy Subway, Sonic and Taco Bell. In Rolla, I also enjoy Maid-rite, which I have only seen in Rolla, though I know there used to be one in Sullivan. They serve crumbled beef burgers. KFC is also delicious occasionally, but sometimes the KFC around here isn’t fast enough to be considered fast food.

2) How many times per week do you eat fast food?
I don’t eat fast food very often. Generally the weeks that I do eat fast food, it is only once.

3) Describe your favorite fast food meal.
Something that is served fast, hot, and full of flavor. A good value also increases the likelihood that it could be classified as a favorite.

4) Do you always Super-Size your meal?
Sometimes I do. If I am at McDonald’s I normally will because I really like their fries. I will also frequently super size at Sonic because I love their tater tots.

5) What is your least favorite fast food restaurant?
Any restaurant that serves primarily roast beef. I’m talking to you Arby’s and Lion’s Choice.
